No Bake Energy Balls!

These energy bites are the perfect grab and go snack, with no-cooking experience required to make them.  Seriously, you don’t even need an oven!  As long as you have a mixing spoon, a bowl, and ten minutes, you can make these and have a yummy snack at your disposal for the next week.  Every time I make these, I think of our early morning clients who often show up for their sessions without having eaten any breakfast…you guys!!!  This is exactly what you need to make!  That way, on your way out the door to the studio, you can grab one or two of these energy balls from the fridge and eat them on your way over to Pilates of Charleston!  Whoop whoop!

seriously delicious energy balls
Ingredients: 
1 cup old fashioned oats
1 cup unsweetened coconut flakes (lightly toasted)
1/2 cup ground flaxseed
1/3 cup peanut butter
1/4 cup honey (or agave nectar)
1/4 dark chocolate chips
1/4 cup goji berries
1 teaspoon chia seeds
1 teaspoon vanilla extract
 
It doesn’t get any easier than this!  Place all the ingredients together in a bowl and stir with a large spoon until well combined.  Then, refrigerate about 20 minutes because it makes it a little easier to roll into balls.  Remove from the fridge, and then scoop a tablespoon of the mixture and roll it into a small ball between the palms of your hands.  Repeat until all of the mixture is gone.  And TaDa!  You’re done!   
 
(If you notice the mixture is falling apart as you’re rolling them into balls, then add a little bit more honey or peanut butter to it and try again.  On the flip side, if you’re noticing the mixture is too sticky, then add some more oats or coconut flakes.)
