Free Recipe Friday – Blueberry and Banana Muffins

Banana and Blueberry Muffins.

This Friday, Julie our Pilates and Fitness Instructor at Pilates of Charleston presents you with one of her favorite easy muffin recipes.  Great for energy and even better as a quick snack before class at Pilates of Charleston.

Julie recommends using a high power blender such as The Ninja to blend all the ingredients together.

Ingredients:

1 cup Oats

2 Large Bananas

1 cup Blueberries

2 eggs

1/3 cup of honey or agave

1/2 cup almond milk

2 Tsp Vanilla extract

2 Tsp Baking powder

1/2 Tsp Baking soda

1/2 Tsp salt

Generous shakes of cinnamon

Place all the ingredients into your high powered mixer.  The pour mixture into muffin tin, and top with chocolate chips if you feel the need 😉 Bake at 350 degrees for 10 – 14 minutes (or when toothpick comes out clean.)

Julie says you can even substitute different fruits too.  Even top some with some walnuts or add Chia seeds into the mix.
